Rustic Hot Pot

Serves 4
Preparation time: 20 minutes
Cooking time: 32-35 minutes

Ingredients:
1 tablespoon virgin olive oil, cold pressed
460 grams (16oz/1lb) lamb, diced
1/4 onion, sliced
4 cloves garlic, finely chopped
3 bay leaves, torn in two
2 teaspoons cumin
1 teaspoon hot paprika
2 teaspoons sweet paprika
8 cups SureSlim vegetable stock
3 sticks celery, diced
2 medium tomatoes, chopped
200 grams (7oz/0.4lb) cauliflower, broken into small florets
200 grams (7oz/0.4lb) cabbage, shredded
2 teaspoons Herbamare (herbal salt)
4 low-GI tortilla wraps

Method:

  1. Heat oil in large heavy based saucepan.
  2. Add lamb and cook until lightly browned. Add onion, garlic and bay leaves. Cook over low heat for 10 minutes, stirring regularly.
  3. Add cumin, hot and sweet paprika. Cook for a further 2 minutes.
  4. Gradually add vegetable stock, vegetables and Herbamare.
  5. Simmer for 30 minutes.

Serve with low-GI tortilla wraps

Strawberries in Ginger and Mint Syrup
with Vanilla Yoghurt

Serves 4
Preparation time: 20 minutes

Ingredients:
400 grams (14oz/0.9lb) fresh strawberries, rinsed and hulled

Mint Syrup:
1 cup water
1 tablespoon fresh ginger, peeled and grated
2 strips lemon peel
1 cinnamon stick
1 teaspoon mint leaves, chopped
1/8 teaspoon SureSlim sugar replacer

Yoghurt:
800 grams (28oz/1.7lb) plain low fat yoghurt
3 cm (1.25”) vanilla pod, split and scraped
1/8 teaspoon SureSlim sugar replacer (optional)

Method:

Syrup:

  1. Combine water, ginger, lemon zest, cinnamon, mint and SureSlim sugar replacer in a saucepan.
  2. Bring to the boil, reduce heat and simmer until liquid reduces by half. Strain liquid and allow to cool.

Yoghurt:

  1. Place yoghurt, vanilla and SureSlim sugar replacer in a small bowl and mix until combined.

Serve yoghurt in bowls, garnished with strawberries and mint syrup.
